Fisherman’s Soup

I found what looked to be a delicious soup on Pinterest and could not wait to give it a whirl. So much of the time, what you find on Pinterest is pretty much just a pretty photo or novel idea. Not this time! I had a feeling about Cookin’ Canuck’s recipe for Fisherman’s Soup and my instincts set me in the right direction.

Every so often, I develop a new blog crush. My longest one-way relationship was with The Pioneer Woman. My newest? Cookin’ Canuck of course! I love that she is super down to earth, totally adorable and she’s been through a weight loss journey herself.

Serves: 4-6
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, seeded & diced
  • 1 large carrot, diced
  • ½ tsp dried oregano
  • ⅛ - ¼ tsp dried (crushed) chile flakes
  • ½ cup chopped flat-leaf parsley
  • ½ cup dry white wine
  • 1 can (28 oz.) petite diced tomatoes (juices included)
  • ¾ cup vegetable broth
  • ½ tsp kosher salt
  • 1¼ lb. firm white fish (such as tilapia), cut into 1-inch pieces
  • ½ lb. medium shrimp, shelled
  • 2 tbsp capers
  • Salt & pepper, to taste
  1. Heat the olive oil in a large saucepan set over medium heat.
  2. Add the onion, garlic, red bell pepper and carrot. Cook, stirring occasionally, until the onions and peppers are tender, 7 to 8 minutes.
  3. Add the oregano and chile flakes, and cook for 1 minute. Add the parsley and white wine, and cook for 1 additional minute.
  4. Add the tomatoes and vegetable broth, and bring to a simmer.
  5. Add the tilapia pieces and cook, stirring occasionally, until the fish is almost cooked through, about 4 minutes.
  6. Add the shrimp and continue to simmer until the shrimp is barely cooked through, 2 to 3 minutes. Remove from heat, stir in capers and season to taste with salt and pepper. Serve.

The worst part of this soup was peeling the shells of the shrimp. Follow the recipe and get shelled (meaning no-shell) shrimp. I could have never married a food critic or adventure loving eater like Anthony Bourdain. Shelling the shrimp was super traumatizing.

Now, off to get in a workout. Dallas is helping me stay on track with exercising; we have a calendar to mark all our workouts. One month and I’m rewarded with a mani/pedi and he gets a new Wii game. After my four month (16 week) DAMY plan is over, I have made Jy promise me a big, fat, long date in San Francisco. Time to go sweat and forget about the WORST picture of me posted on my dentist’s Facebook page. Seriously, the worst. I had to ask them to take it down it was so awful. Talk about a tearful motivation.

DAMY Has Street Cred – My experience



This is the BEST time of year to shed pounds. I don’t just think it, I have seen it! Do you know anyone losing weight right now? I bet you do. It’s after the major holidays, before summer and a fairly boring time of the year for food. I’ve talked a lot about DAMY in the past. Whenever someone asks me what I mean by DAMY, I take a minute and let them know that the program owners are Dave and Amy, hence the name. Ah ha. Ok, got it.

So DAMY programs are health programs, plain and simple. There are a couple of different types, depending on where you are right now. If you are someone with more than a handful of pounds to shed or someone who is fairly new to a seriously healthy lifestyle, you want the Method Program.

If you are like some of the chicks I know, who understand that eating healthy doesn’t mean Lean Cuisines for lunch and you are already exercising regularly, you’ll want the Bikini Body Program.

I always laugh when I see magazines claim they can get me bikini ready in 6 weeks. Really? Can you? That’s a big claim, my friend. If you tell me I just have to do three days of cardio and two days of leg lifts before I am bikini ready, perhaps you are a candidate for Lasik eye surgery.

In the past, I have posted some of the reasons why I went off track with DAMY. Now that I am back on the program, I am feeling much better and want some friends to DAMY with me!

You will never see a bikini photo of me on this blog, that just ain’t gonna happen. But, let me show you how much better I looked after two short months on the program one year ago.



DAMY gave me energy, helped my mood, made me MUCH stronger and took off a good 20 pounds. Too bad it couldn’t hide my bra straps in my photos.

I had only seen her “after” picture and figured there was no way this chick ever struggled with weighing too much. I also ass-u-med that she was probably snotty and full of herself. I’m just going to put it out there that I gained back the weight I lost on the DAMY Method plan. Why? Because I totally went back to my old habits. Why did I do that? I don’t know! One week rolled into another and then through the gluten thickening forest of no exercise I slowly walked until BAM, tight jeans. Yeah, the jeans that were falling off in the spring. Dang Tina!

I have this in the fridge, waiting for tomorrow morning’s DAMY kick-off breakfast.

It’s a jar of greek yogurt to soak my oats, with some freshly roasted pumpkin puree, fresh apples, agave nectar and chia seeds. You don’t have to eat weird concoctions like this on DAMY, I just want something different.

So, who is with me? This past February, I dropped 10 pounds in my first 4 weeks and had seriously loose pants. I’m trying to keep that in the front of my mind as Christmas food is quickly approaching. I have no desire to head into 2013 feeling the way I do now.

OH! I almost forgot to share the number one reason I chose the DAMY plan. She wants you to eat real food. Actual food. Not 100 calorie snack packs, not aspartame loaded Yoplait and certainly not prepackaged frozen meals. That, I totally appreciate. There are no powders or pills, special shakes or anything weird. It’s holistic, it’s seriously healthy and it is time. Come on!

The workouts are great, too. I totally enjoy strength training over cardio and was amazed at how well put together my 12 weeks of training were.

Chocolate Protein Bagels

I’m writing to you from my vacation home and it is so relaxing here! There is a private pool, hot tub, two massive televisions and one really comfortable bed. We love coming here and using the high pressure shower, baking in one of the double ovens and enjoying the luxuries of space.

Where is my vacation home you ask? (Or, you didn’t ask.) Well, it’s only ten minutes from my regular home and we didn’t pay a thing for it. Ready for the ultimate high school answer? We have my parent’s house to ourselves. One of my husband’s young employees once referred to this as, “having house”.

We are taking care of my parent’s house for them, even if they didn’t really ask us to. Maybe they just knew they could count on us to do so? They did ask us to do a few things, including picking up mail. We are just the type of loving family that goes the extra mile.

Anyhow, lots to report to you all! Let’s start with some muffins.

These healthy, gluten free muffins you see are family friendly, which is almost never the case. They are not super sweet and will work with almost any berry.  I used the fatty blackberries and raspberries we found at the farmer’s market. The official name of these muffins is, “The Best Almond Flour Blueberry Muffins“.

You can find the recipe over in the world of DAMY Health. Remember when I wouldn’t stop chatting you up about the DAMY programs? It isn’t so coincidental that my pants fit much looser at the time of those postings. I’ve let some pounds creep back on and I blame it on my lack of DAMYing.

The biggest and best change that came about through my time doing the DAMY program is how I start my day. I always, always eat a protein pancake for breakfast and sip a glass of iced (black) coffee along side. What I really wish stuck with me is my old exercise routine. Dang! I’ve been back on the health wagon for about 8 hours now, so pray I keep this ball rolling. There’s no special recipe for the veggie soup you see above, but I wanted to let you know that grated cauliflower sauteed in a tablespoon of olive oil can change every meal. Swear.

Alas, there was no better time than earlier this morning to rekindle my DAMY romance. If anyone wants to join me, please do. The reason I fell in love with the program was because it is based on eating whole, real foods. You aren’t asked to buy supplements, other than protein powder (if you want), nor are you even required to belong to a gym. I do all my workouts at home or outside. The cost was a factor as well, as I had just given too much of my own husbands hard earned money away to Weight Watchers. I would lose weight after finding ways to use my points on 100 calorie packs of cookies, but never really felt healthy.

I am now proud to me known as a DAMY ambassador! That means I am going to be sharing my journey with you and will be delving deep into the world of DAMY. The programs are all about loving a healthy lifestyle and yourself. Join me anytime!

Peanut Butter Hummus

Hello and happy late in the day Thursday! Today we are talking household favorites. I’ll let the boys go first.

Max and Dallas’ Favorites

  Wild hair, neon dry erase markers and the big blue exercise ball. Oh, and doing their favorite chant which goes something like this, “Hop! Hop! Pickaliss!” I have no clue what it means, but when Dallas was Max’s age (21 months) he had his own favorite saying, “OH shauntee!” That was right before he invented his wrestling move, where he would put his diapered butt on your face and announce, “BOOJY!”

Kim’s Favorites

I was about to call this section, Mom’s Favorites, but I sometimes remember that I do have another identity. Lots of my volunteer duties for the year are slowly wrapping up, but I still have more than I probably should on my plate. I’ve had to let things slide a bit lately, because I am trying my best to no longer put myself last. It’s taking longer for our home to get clean, we aren’t going on as many field trips, I’m not blogging at night like I’d prefer and so on. However, I am also not eating scones for breakfast, pb&j for lunch, a small dinner and then lots of cereal before bed. I am taking the time to take care of myself and my energy level and jeans are thanking me for it.

The things I’m loving right now are:

  • Flaxseed – I doubt details are needed here. But life is much better with a cooperating GI system
  • Trader Joe’s chocolate protein powder
  • my Kindle Fire – it’s totally life changing!
  • Once Upon a Time – such a fun show

While this should be a family favorite, I’ll add it here…DAMY’s Peanut Butter Hummus. I wasn’t so sure that we would enjoy this recipe, many of the homemade hummus trials of the past have led to dry, garlic laden, pasty dip. Not this dip. I have made this three times so far, each time because we ran out. The kids love it, I love it and even my meat loving husband loves it!
PB hummus works with anything that regular hummus pairs with, my favorite being apples! I like that I don’t have to buy Tahini for this recipe, too. The Voice (Television)

 Still feeling the Oscar hangover, Movie Fuel is going to jump the shark this week.  Since its inception 11 seasons ago, I have always been a big closeted American Idol fan (and still am for the most part).  Recently, however, my attention has turned to a new singing reality series.  With less drama, better judges and a more fun format, The Voice has quickly replaced the stale Fox network overkill that was once the perennial favorite on our family television week in and week out.  Why I like these shows, I am not quite sure, but there is something special about an average citizen like you and I shooting to superstardom basically overnight because of an opportunity  to show off their singing talent.

Drama versus Singing

American Idol used to be about the music, but has gradually transgressed into yelling, fainting, obnoxious, poisonous prima donnas.  The last straw this season, was when an entire show (two hours!) was dedicated to the squabbling that took place during “group week” with absolutely no singing that took place the entire episode?  First of all, why do solo artists even have to  have a group format?  It always seemed ridiculous to me.  I understand, part of the show is to do terrible Brady Bunch style group songs with bad dancing and horrid costumes, but when trying to find a star in the making, why waste the time?  Well, luckily, The Voice doesn’t care if you can sing in a group as long as you can sing!  The NBC hit starts with what are called “Blind Auditions”; the judges can only listen to the artist (without seeing them) and base their decision to move them on to the next round based on their voice only.  And, while there is a story line for each contestant, it is quick and painless.  The best part of the show is that all of the contestants have been prescreened and by the time we see them on our televisions, we already know they will be good singers, it is just  a matter of how good!  We can do without the William Hung’s and the costumed freaks who are sent in front of the judges just to be lambasted.  While some people watch American Idol just for the train wrecks, it has gotten old after a decade.


Let’s face it, the judges on American Idol without Simon Cowell are just plain boring and lost.  Two has-beens and one never-been, repeating the same judgments and recommendations about being “pitchy” or being “born with it” or being compared to past Idol contestants who we barely remember.  Steven Tyler is like your crazy grandmother (literally), Randy Jackson keeps trying to be hip with his weird outfits and overuse of the word “dawg” (which was popular in the 90′s) and Jennifer Lopez still wants one of her entourage to pick out the green M&M’s from her candy dish (it’s not happening!  You’re done!).  With The Voice, you have four relevant music stars with positive feedback and informed recommendations based on what it has taken them to become top selling artists today. Cee Lo Green has had huge hits and is still going; from underground hip hop to mainstream pop, the Gnarls Barkley front man and “F*%$ You” balladeer, you can just tell, really knows and loves music (watch him lip synch every song that the contestants sing). Yes, the Dr. Evil cat is a little weird, but part of being a superstar requires being eccentric and Cee Lo is as close to a contemporary Elton John as our generation is going to get. Maroon 5 front man Adam Levine is the a-hole with a heart of gold (well maybe not so much).  His past transgression and well known escapades as a womanizer and general miscreant is almost forgiven while watching his nice guy persona encourage the budding stars on stage.  Of the four judges, he seems to know what he is talking about the most and has a natural confidence that makes you want to root for him and his team of singers.  Country singer Blake Shelton is easily the funniest judge on the show and has the quickest wit.  One of the best parts of watching the show is hearing him take digs at his fellow judges; Christina Aguillera’s ridiculous chest, Cee Lo’s height and jewelry, Adam’s pretty boy persona and so much more. The dynamic of having a country singer judge on a pop singing show only helps its credibility that much more.  Then, there is Christina Aguillera.  By far the most annoying and fake contestant (no pun intended), she reminds me of a louder, dumber, blonde Elvira.  But her personality contrasts really well with the other judges, similar to Paula Abdul in the early Idol days.  And, what’s not to like about the judges hugging each contestant picked as part of their team?


American Idol is about singing, but it is also about image (as they say, “that is what sells albums”).  Because of this, there is a tendency to pick out the youngest and prettiest contestants on the show, not always the most vocally talented.  With The Voice, especially during the blind auditions, image is nothing.  The talent is prescreened for quality chops and regardless of age, sex, race, gender, etc. the best talent is chosen.  The elimination rounds are fun too.  Instead of group competitions filled with cat fights and people hitting the floor do to exhaustion, each contestant on The Voice goes head to head with one another and then are paired down from 48 to 24 and then go to the live show where America votes.  There’s no triple elimination or situations where groups are piled into a conference room just to be made to wonder whether or not they made it and then tricked when the judges come into the room, etc.  It’s a purer version of a reality singing contest.

The best part of The Voice is that it is only one once a week , Monday’s at 8pm.  So check it out!  You won’t be disappointed!

Road Trip Series: Chocolate Protein Baked Bagels

On the Road Again, just can’t wait to get that song out of my head again.

We have seven weeks until our big road trip to Disneyland and I am vowing to be ready ahead of time. I hope, no I plan to have all my food prepared for the trip and frozen ahead of time if possible. One of the newest menu items for our trip? Chocolate Protein Baked Bagels.

Let me give you a heads up before I continue on, these are not bagels folks. These are dense protein muffins baked in a donut pan. If you are looking for a 400 calorie bagel and cream cheese combo that will send your blood sugar soaring and then crashing, hit Noah’s Bagels (or your local equivalent). These are a substitute for those looking to stay satiated and keep the calories low and the fiber high.

In other words, don’t serve this at your Easter brunch.

This recipe comes again from DAMY Health. I mentioned that I wasn’t able to weigh myself or take measurements until day 15, which is today. Nervously, I stepped on the scale and was happily surprised with a 4.7 pound loss. Hurray! Only 0.3 pounds to go and I’ll have that supermodel body I’ve always wanted.Anyone wanna buy a bridge?

I’ve lost 5 pounds before. It is usually with Weight Watchers and usually takes me a month to six weeks to get the first five off. What I am loving about this time around is how different I feel. Losing weight by eating clean and exercising more feels totally different from dropping pounds through Splenda induced lattes and 100 calorie cookie packs. It is kind of hard to get used to eating so much protein, but I ain’t arguing with the scale!

I only made one recipe swap. Rather than smashed blueberries, I used applesauce. Well, I also used a donut pan. Two donut halves will make up one “bagel”. These taste really good with some whipped cream cheese in the middle too. If you want to use a light cream cheese and whip it yourself, you can really get more cheese for your calorie. This also gives you the option of adding flavor.

My friend Jessica brought light cream cheesed mixed with stevia, Trader Joe’s Pumpkin Butter and uh…shoot…maybe something else, I’ll have to ask. Anyway, she brought it to share with fellow moms last week and it was amazing!

Lemon Maple Cheesecake Squares (Healthy and Clean)

First off, Happy Birthday to my wonderful husband and best friend, Jy! I’m sure you have heard me say enough nice things about my husband, but he’s just really nice. He is a wonderful father and patient, caring and funny husband. Happy big 35, Jy!

To celebrate his big day, both of our boys got the stomach flu this week. Dallas is over it, but can’t shake the sick blues, so he hitched a ride to Grandpa’s house from preschool today. Max is also over the worst of it, so please pray for a peaceful evening for Jy!

Today, I tried making one of the many cheesecake squares featured on the site DamyHealth.com. This recipe can be changed in a number of way, all of which seem delicious. Chocolate, strawberry and pecan are a few of the cheesecake recipes you can find on the DAMY website. Warning: if you choose to visit DAMY, plan to feel fat. Her recipes are great, but just going to her site will encourage you to get off your booty and start moving. I think  that is a good thing.

I used the “Healthy Lemon Coconut Cheesecake” recipe with a few changes. While I didn’t have any greek yogurt on hand, I did have Brown Cow Creme Top Maple. While the full fat yogurt added calories, it also added flavor and I didn’t need to use any honey. My pantry was also a bit shy of cashews, so around a quarter cup of chopped pecans went in the crust, too.

I don’t know enough about Stevia to judge one way or another, but “apparently” the sweetener is natural and much better than Splenda. I’m sure I’ll find out that I’m wrong as soon as I post this.

While these squares don’t look like your typical cheesecake, I can promise you, the flavor is out of this world. I’ll have to try these again in the summer as a sweet, frozen treat.
