Sweetly Spiced Nuts
I am hosting a board meeting tonight. What? You didn’t know I was part of a Fortune 500 company? Heehee. It’s actually a MOMS club meeting. MOMS is capitalized because it is the a specific club, named…MOMS club. It is an international club and I am on the board of my local chapter. What do we do? Support other stay at home moms, philanthropic work and a lot of playing and party planning.
I want to bring some food that keeps that fall feeling rolling. There was a good decade of my life when holidays weren’t too big of a deal. I knew that once I was married, I would want to pump the volume back up for these special days. Food, decor and scent (thank you Bath & Body works) are what really set the tone in my mind.
First up, spiced nuts. Now that I am a Pinterest fanatic, I use the site as my Google for do it yourself fare. I search for the best looking photo, peek at the recipe and give it a whirl. Not all recipes with nice photos taste that nice or perform as well as the blog author likes to pretend. This time, I lucked out.
Two Tarts is a sweet blog that now has a permanent place in my list of go-to food blogs. The spiced nut recipe found on Two Tarts was ridonkulous easy, tasty and seems easy to change up.
- 2 eggs whites
- 4 cups whole raw nuts (this means unroasted & unsalted)
- 1 cup white sugar
- 2 tsp cinnamon
- ¼ tsp ground cloves
- ½ tsp nutmeg
- Add the two eggs whites to a large bowl and whisk until broken up and just starting to become foamy. Add the 4 cups of nuts and stir well to completely coat the nuts in the egg white. Add sugar and spices, stir well to coat. Spread the nuts into a single thin layer on 2 baking sheets covered in parchment.
- Bake at 300 degrees for 30-40 minutes, or until nuts are no longer sticky and flexible. Let cool completely, then break apart and enjoy.
I have some pumpkin bread muffins (you read that right) in the oven. I’m excited to share the recipe with you! It came from a CSA produce box. However, it is almost 3 p.m. and this post just can’t wait. Plus, I wanna go sit and eat some nuts.
